INGREDIENTS FOR 4 PEOPLE:
  • 1 pack Casa Modena Spianata Calabra Piccante 80 g
  • 30 g red onions
  • 1 small garlic clove
  • 40 g olive oil
  • 70 g red pepper
  • 200 g sieved tomatoes
  • 4-5 stems of fresh basil
  • 360 g short-cut tubular pasta (for example, Mezze Maniche)
  • 40 g Scamorza cheese (smoked mozzarella)
  • 50 g grated Pecorino cheese (hard cheese from sheep’s milk)
  • Salt

Finely chop the onion and garlic and braise both lightly in olive oil. Add the sliced paprika and fry gently for another 5 minutes, then add the sieved tomatoes and simmer for 10 minutes. Mince the basil leaves and add to the sauce, season with salt.

Cook the pasta in salted water and mix with the sauce. Dice and mix the Spianata Calabra and the Scamorza cheese. Serve the pasta on plates, sprinkle with Pecorino and serve.
